Quince Paste with Espelette

From Provence. 

This quince paste is traditionally made with the fruit pulp being stirred in copper cauldrons, then poured into wooden forms to cool. The non-tradtional aspect here is the addition of Espelette pepper, which provides a warming heat that pairs incredible well with the elegant sweetness of the quince. 

This is one of our absolute favorite new items to add to our cheese plates.
