Made in Wisconin from raw cows milk
This cheese graces us just once a year. The first milking when cows come in from the fields for the winter yields a higher milk fat, and that milk is used to create this bark-wrapped cheese that is washed fro 60 days.
The flavor is full, woodsy, and bacon-y. The texture is incredible velvet-y, scoopable, and rich on the palate.
Cut off the top and dig in.
